Birthday cakes, he explained, are the most common request\u2014especially from patients in end-of-life care\u2014because of the emotional significance they carry.<\/p>\n\n\n\n<p>\u201cThey\u2019re small things,\u201d he said, \u201cbut especially for people who\u2019ve been isolated or lonely, they mean a lot.\u201d<\/p>\n\n\n\n<p>Spencer emphasized that adapting is just as important as cooking. \u201cPatients often lose the ability to swallow or experience changes in taste due to medication or chemotherapy,\u201d he noted. Cancer patients often crave sweets and become sensitive to salt, so he tailors meals accordingly.<\/p>\n\n\n\n<p>His menu draws global inspiration, offering comforting French desserts like panna cotta and cr\u00e8me caramel. For those unable to eat solids, Spencer still plates with care\u2014using jelly or ice cream instead.<\/p>\n\n\n\n<p>\u201cWe don\u2019t always know at the time what it means,\u201d he said. \u201cBut families come back months later, just to say thank you.\u201d<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>One family returned on Christmas Day with food, in gratitude. \u201cFood is powerfully emotive,\u201d Spencer reflected. \u201cIt creates lasting memories.
