Growing corn in my garden and thought my corn was growing rocks. What in the world is this!?
This is huitlacoche, or corn smut, caused by the fungus Mycosarcoma maydis. The infected corn is edible, and considered a delicacy.

Just a warning about your corn fungus, only the immature galls are good for eating. Harvest them when they’re green or silver and firm. Mature galls are black and completely full of spores, which is not tasty 🙁
Corn smut. It’s an infection. Totally edible though. As a matter of fact in Mexico it’s called huitlacoche and it’s considered a delicacy
